1 Fresh wild tuna steak
1/2 celery stalk chopped
1 lemon squeezed
4-5 green onions minced
1 tablespoon apple cider vinegar or white wine vinegar
Sprinkling of fresh basil, salt (I use lavender salt), & pepper
2 tablespoons Dijon mustard
1 tablespoon olive oil (if allowed on your diet)
SALAD FIXINGS:
Lettuce mix of kale, romaine, red lettuce, butter lettuce
Red cabbage
Tomatoes
Jicama
1/5 avocado (only if allowed on your diet)
Mandarin orange slices
Snap Peas
Carrots
3-4 tiny fresh pineapple bits
Fresh red beets, orange beets
DRESSING:
1. Modena Balsamic Vinegar sprinkled across or your favorite dressing allowed on your diet.
2. Kym's Dad's favorite: Apple Cider Berry Pineapple Vinegarette
1/3 cup apple cider vinegar
4 strawberries
4 small slices of pineapple
sprinkle of flax seed
2 tablespoons Dijon Mustard
1/2 cup water

1 teaspoon salt substitute
1/8 teaspoon freshly ground black pepper
2 shallots, minced
1/4 red bell pepper, minced
2 tablespoons Dijon mustard
2 cloves glaric minced
1/2 teaspoon freshly minced Italian parsley
1/2 teaspoon paprika
